FAQs

Cassia cinnamon (common variety) has a bolder, spicier flavour and thicker darker bark rolls. Ceylon cinnamon (True Cinnamon from Sri Lanka) has a milder, sweeter, more complex flavour with thinner, tightly wound multi-layered quills. Ceylon cinnamon has a lower coumarin content, making it safer for regular daily consumption.

Add whole sticks to hot oil or ghee at the start of cooking to infuse flavour into biryanis, pulao and curries. Simmer in milk, chai or desserts. Use in mulled wine or spiced drinks. Remove before serving as the sticks are not eaten whole. Grind for baking and spice powders.

Research suggests cinnamon may improve insulin sensitivity and help manage blood sugar. Cinnamaldehyde — cinnamon's primary bioactive compound — may mimic insulin and improve glucose uptake.
