FAQs
Star anise (Illicium verum) and anise seeds (Pimpinella anisum) are entirely different plants but share a similar flavour compound — anethole. Star anise is more intense and is the commercial source of shikimic acid (used in Tamiflu). Anise seeds are milder. They are interchangeable in some recipes but star anise is much more potent.
Add 1–2 whole stars to hot oil at the start of biryani or meat curries. Use in soups, stews and slow-cooked dishes where it can infuse for 30+ minutes. Include in Chinese five-spice blends and pho broth. Simmer in milk-based desserts like payasam. Remove before serving as the texture is woody and unpleasant to bite.
Star anise has been used in traditional medicine for centuries for bloating, gas and digestive discomfort. It is a natural expectorant used for coughs and colds. Shikimic acid from star anise is the key ingredient in the antiviral drug Tamiflu. In Ayurveda, it is used as a warming herb to stimulate digestion.
Store whole stars in an airtight container away from light, heat and moisture. The strong anethole aroma dissipates once exposed to air. Properly sealed whole stars retain potency for 24 months. Avoid storing near other strongly scented spices as star anise can transfer its aroma.
