Both come from the same fruit of Myristica fragrans. Nutmeg is the inner seed; mace (Javitri) is the red lacy aril (covering) around the seed. Mace has a lighter, more refined and slightly sweeter flavour than nutmeg. It is rarer (one mace per nutmeg) and considered more premium. Mace is used where a subtler, more elegant spice note is desired.
Mace is a signature ingredient in authentic Mughlai cuisine — it appears in biryani masala, korma, nihari, shahi paneer and Dum Pukht preparations. It imparts the characteristic refined aroma that distinguishes royal Mughlai flavours. Add a small piece to the oil at the start or grind into the masala paste.
Yes, they can be substituted for each other in most recipes. Use slightly less mace than nutmeg as mace is more delicate — the ratio is approximately 1 blade of mace = 1/4 teaspoon ground nutmeg. Mace gives a more refined, floral note while nutmeg is warmer and earthier.
Store whole mace blades in an airtight container in a cool dry place away from direct sunlight. Whole mace retains its aroma significantly longer than ground mace. Properly stored, it keeps for up to 24 months. Ground mace is best used within 6 months of grinding.
