Kudampuli is the dried rind of Garcinia cambogia — a completely different plant from regular tamarind (Tamarindus indica). While both are used as souring agents, Kudampuli delivers a unique smoky, fruity-sour flavour that is the hallmark of Kerala fish curry. Regular tamarind cannot replicate its distinctive taste and dark colour.
Soak 1–2 dried pieces of Kudampuli in warm water for 10–15 minutes. Add the soaked pieces along with the soaking water directly to your fish curry or coconut milk curry. The colour will turn a deep reddish-brown and the flavour will be tangy, smoky and slightly sweet. Remove the pieces before serving.
They are similar in use but different plants. Kudampuli (Garcinia cambogia) is specific to Kerala and is used almost exclusively in fish curries. Kokum (Garcinia indica) is used in Konkan and Goan cuisines. Both are members of the Garcinia family and act as souring agents, but their flavour profiles differ slightly.
