Kerala chilly is known for its balance of heat and rich red colour with a distinct smoky-fruity undertone. Kashmiri chilly is mild and prized for colour; Guntur is extremely hot. Kerala chilly falls in the medium-high heat range with excellent colour and aroma — making it ideal for South Indian cooking where both colour and heat matter.
Dry the chilies in sunlight for 1–2 hours. Remove stems. Dry-roast in a pan for 2–3 minutes until fragrant. Cool completely. Grind in a mixer grinder to desired fineness. Freshly ground chilly powder has significantly superior colour, aroma and heat compared to pre-packaged commercial varieties.
Yes. Kerala chillies are rich in capsaicin — which has pain-relieving, anti-inflammatory and metabolism-boosting properties. To reduce heat: remove seeds and membranes from dried chillies before use (they contain most of the capsaicin). Add dairy (yoghurt, coconut milk, cream) to the dish to neutralise capsaicin.
